Tandoori Chicken Wings
(serves about 10)
4-5 lbs of skinless chicken wings, about 28-30 (tips removed)
For the marinade:
5-6 cloves of garlic, minced
1 2-inch piece of ginger, peeled and minced
3 cups of plain yogurt
2 small green chilies, minced
Juice of 1 lemon
3 tbsp store-bought tandoori paste (or 4 tblsp tandoori masala powder)
Salt and Pepper to taste
Mix together marinade ingredients until smooth. Combine marinade with chicken wings in large plastic zip-top bags, making sure the wings are coated in marinade. Refrigerate and marinate for at least 5 hours to overnight (the longer the chicken marinates, the better).
Preheat oven to 400 degrees F. Line a cookie sheet with foil, and cover lightly with cooking spray. Remove chicken from bags, discarding excess marinade, and place on prepared sheet in a single layer. Drizzle lightly with oil, and bake for 10-12 minutes. Turn wings over and bake for another 10 minutes. Check to make sure the chicken is cooked fully through. If you like extra crispy wings, quickly pan-fry the wings in a tablespoon of oil for a few minutes after removing from the oven.
Squeeze lemon juice on wings and garnish with lemon wedges.
